Binging with Babish: National Grilled Cheese Day + VidCon Announcement

Hey, what’s up guys, welcome to a very special National Grilled Cheese Day where I am making public an old Patreon-exclusive in which I recreate Chef Carl Casper’s “I love you son even though I’m not very good at showing it” grilled cheese. We’re starting with a little bit of olive oil in a cast iron pan, then we are liberally buttering two slices of sourdough bread Placing in the pan over medium/medium-high heat, trying to get a little bit of a toast going, before adding gruyere, cheddar, and parmesan cheese. This cheese blend was tweeted by the man himself at 8:04am on July 13th, 2014. Once these guys get a little toast going and the cheese is looking a little melty, let’s bring the two halves together and, sort of inexplicably, continue spreading butter on the bread; this is what he does in the movie. If I had to guess why, I’d say it’s to add a little bit more buttery-ness. Continue toasting and flipping as necessary until nice and brown and the cheese is totally melted. If it needs a little help, throw a pot lid on top, pour yourself a little bit of tequila, and in a few minutes you’ll have a nice, toasty, melty grilled cheese. Most of this stuff is pretty standard, but the cheese blend is really where it’s at. The only thing I might do differently would be to use comté or fontina cheese in place of the cheddar. And now, what we all came here for, the cheese stretch. A moment of silence, please. Let’s listen in to my celebration of this treasured national holiday. “I mean…shut the f*** up.” *Distant laughter* “Mmmm!” Yeah, shocker, it’s really tasty.   1. I hate my country, I'm dutch and we're supposed to be known for our cheese but to get anything but Gouda, Beemster, processed cheese or preshredded parmazan is ordering it online which I'm way too lazy for

  2. I've given up on buttering the bread when I make grilled sandwiches. Instead, I melt a few tablespoons of butter in a skillet and then put the already assembled sandwich in and swirl it around the pan to absorb the already melted butter. No more worries about tearing the bread up while spreading and you get a perfectly even toast every time.

  3. Finally , people get a "multiple cheese"! I, however, love a few slices of roma's added to the sandwich, and use swiss, cheddar and american.

  6. recently made a margarita pizza grilled cheese. Pizza sauce, mozzarella, and basil on bread. Very yummy, 10/10. good way to eat pizza for lunch at work everyday without people getting judgy

  7. I can't grill my bread in my pan. Is it because it's not cast iron? send help. Sometimes, the oil and butter start burning completely off of the pan before it can start getting dark so it's just dry uncooked sadness
    will try again another week lol

  8. I'm Belgian and here we never eat grilled cheeses but always croque monsieurs so it's bassically a grilled cheese with ham

  9. Hey Babish, next time you make a Grilled Cheese, you should try to find some Muenster Cheese to replace the Gruyere. Muenster is Native to Wisconsin and I personally prefer it over almost every other cheese, except for Sharp Cheddar and Pepper Jack.

  12. One of the best tricks I ever learned for a beautiful golden brown grilled cheese is to use mayonnaise instead of butter, that is, to thinly coat the outside of the sandwich with mayonnaise, assemble the cheese and cook as a one piece sandwich, flipping halfway through.

  15. Thanks a lot for the great video! Whenever I would make these in the past the middle would always come out soggy, so cooking each side first then adding the cheese after is a great idea!

  18. Hey with this combination you used here surely you noticed that the olive oil enhanced the butter quality and flavor

    And in your grilled cheese deluxe video you surely noticed how much more even the browning of the bread was when you used mayo


  19. This is the first thing I ever cooked and I’ve only cooked two things as of now. That’s my two attempts at making this grilled cheese I did a lot better this time and I’m gonna be cooking a lot of stuff on the channel from here on. Don’t think I’ll be a chef but thanks for helping me find other areas to my passion into
